Quick Sweet-Pickled Cucumbers

Choose fresh, crisp cucumbers for this recipe. Assemble in the morning and serve at your picnic lunch or dinner. We always enjoy a meal of corn on the cob, cucumbers, and grilled steak.



8 medium cucumbers, thinly sliced

1 1/3 cups white vinegar

8 tsp. water

1/2 cup of honey

2 tsp. of pickling salt

1 tsp. of Pickling Spice (link to purchase at bottom of page)

2 tsp. parsley flakes (link to purchase at bottom of page)


Place cucumbers in a bowl. In another bowl, combine vinegar, water, honey, salt, pickling spice and parsley. Pour over the liquid and weigh down with a plate. Refrigerate for 3 hours and serve.


Pickling spice is great for pickling beets, carrots, and even your favorite fruits!
